Want to try out jalapeno poppers but not a fan of the heat? These Zucchini Poppers have the same great creamy, cheesy bacon flavors but are mild enough for any palate.

Instructions

  1. Preheat oven to 400F.
  2. Slice all zucchinis in half lengthwise and horizontally, then use a spoon to scrape out the "guts" of them. (You will end up with 8 zucchini "boats")
  3. In a bowl, mix together cream cheese, mozzarella cheese, and spices of your choice.
  4. Pack cream cheese mixture into zucchinis.
  5. Cut bacon slices in half, then wrap each zucchini boat in 1/2 slice of bacon, starting from the bottom and working up.
  6. Bake for 20-25 minutes, then broil for an additional 2-3 minutes.
