Instructions

  1. Start by washing the zucchini and cutting the ends off
  2. Slice the zucchini into about ⅛ inch slices
  3. Brush the zucchini slices with oil and spice with salt and pepper
  4. Grill the zucchini for 5 minutes, 2.5 per side, until they brown
  5. Combine the goat cheese, dill and mint.
  6. Divide the goat cheese and spread it within the zucchini slices.
  7. Roll the zucchini up and put a toothpick through it.
