Wine and Coffee Beef Stew

A hearty beef stew. The addition of coffee gives it a richness that is delicious. Any red wine will work as long as it is tastes good to your palate. Throw it all together and cook for 3 hours and you will have meal that tastes like it was cooked in a restaurant.

Instructions

  1. Sprinkle salt and pepper onto stew meat and toss to coat.
  2. Slice the onion into thin slices.
  3. Heat the coconut oil in a dutch oven.
  4. Add the beef to the pot and brown. Continue to stir until all the beef is browned. Remove from the pot.
  5. Brew your coffee. (I do not drink coffee and do not own a coffee maker. I used instant coffee and the results tasted fine to me.)
  6. Place the onions, mushrooms and garlic into pot and saute.
  7. Add the wine, coffee, and beef broth to the pot. Stir well mixing together with the vegetables.
  8. Add in the beef and bring to a boil.
  9. Turn the stove down to low and cover the pot. Cook on low for 3 hours.( You could throw it all in a crockpot and cook on low for 8 hours if you have something to do for the day.)
