- Mix the cream cheese, sweetener and vanilla in a medium bowl. Mix until nice and creamy.
- Mix in half of the heavy cream. Let sit for 3 minutes so sweetener is absorbed. Mix in the rest of the heavy cream and continue mixing until the mixture is thick. Firm peaks should begin to form.
- Spoon the mixture into a pastry bag. Pipe the mixture into 18 mini cupcake liners. Place in the fridge for at least an hour. Keep refrigerated and enjoy any time.
