This is a fathead recipe. If you have been on low carb or keto diet, I am sure you have heard of fathead. The dough can be used for pizza or bread.

Who knew fathead dough works for cookies also? This is a great "sugar" recipe which can be modified to your tastes. They can be dusted with confectioners sweetener or dipped in a chocolate ganache.

Instructions

  1. Preheat oven to 350 degrees. In a large bowl, mix together the butter, sweetener, egg whites, and vanilla.
  2. Whisk the flour and baking powder together then mix into the butter mixture. The batter will be very crumbly.
  3. In another bowl. microwave the cream cheese and mozzarella for about one minute. Mix together using hands to combine well.
  4. Add the cheese mixture to the flour mixture and stir. Use your hands to work into a nice dough.(Putting oil on hands helps to keep from sticking) Form into a ball. Let res for 5 minutes.
  5. Shape dough into cylinder log. Refrigerate for 30 minutes.
  6. Cut into 12 equal slices. Place on a parchment lined cookie sheet and bake for 15-18 minutes.
  7. Let cool on rack then enjoy.
