Simple Low Carb Lasagna

Lasagna is one of my absolute favorite meals. Trying to find an alternative that was low carb was not easy. This recipe fits the bill.

The process of putting the lasagna together is fairly easy. After the cauliflower layer is prepared, it does not take much time to cook. I am sure you will want to share this recipe with your friends and family. This is a recipe that will show them how delicious low carb can be.

Ingredients

Instructions

  1. Preheat oven to 375 degrees.
  2. (Cauliflower Layer)-Brown riced cauliflower in a skillet. When finished, use a towel to absorb all excess liquid.
  3. (Cauliflower Layer)-Mix riced cauliflower together with the rest of the ingredients for the cauliflower layer. Press the mixture onto a lined baking sheet. Use your fingers to spread it out similar to pizza dough.
  4. (Cauliflower Layer)- Bake in the preheated oven for 15 minutes. Set aside until needed.
  5. (Meat Sauce)- Brown ground beef and drain the fat. Add the spinach and Alfredo sauce and continue to cook on low until the spinach is wilted. Set aside.
  6. (Cheese Mixture)- Mix all the ingredients for the cheese mixture together in a bowl then set aside.
  7. Spray an 8X8 pan with cooking spray.
  8. Cut the cauliflower layer in half. Trim to fit the pan. Place one half of the cauliflower on the bottom of the pan.
  9. Place half the meat sauce on top of the cauliflower layer. Spread half the cheese mixture on top of the meat sauce.
  10. Layer the other half of the cauliflower and repeat the other layers.
  11. Bake for 20 minutes until bubbly. Broil for 2- 3 minutes to brown the top.
