Comfort food is something people miss from the keto lifestyle. Old fashioned stuffed peppers are one of those foods most people remember from their childhood. This recipe will bring back those memories, but I feel it is even better tasting. My husband had the leftovers for breakfast and said they were still delicious. They are also very simple to make with very little time.

Instructions

  1. Cut bell peppers in half and remove the seeds.
  2. After cleaning the inside out drizzle with olive oil and bake in oven @350 degrees for about 25-35 minutes until tender.
  3. While the peppers are baking, break the sausage up and brown.
  4. Add can of rotel without draining the grease.
  5. Add softened cream cheese and stir until melted.
  6. Add crushed red peppers to taste. ( I like it spicy so tend to add a little more than most people)
  7. After removing peppers from oven stuff them with the sausage mixture and return them to oven. Bake for 5-10 minutes more and then enjoy.
