Good appetizers are not hard to find when living a keto lifestyle. Meats and cheeses are easy an go to. This recipe has meat and cheese but it is wrapped in dough.It is one you will want to have on hand since it does not look or taste low carb. The fact that you can freeze it makes it even better.

  1. Crumble the sausage in a skillet and cook until fully cooked.
  2. Drain the grease from the skillet and add cream cheese and jack cheese. Stir until the cheeses are melted and fully incorporated.
  3. For the dough: Melt the mozzarella and cream cheese together in the microwave. Melt at 30 second intervals stirring after each interval. When the cheese mixture is smooth it is done.
  4. Whisk together the dry ingredients, then add to the cheese mixture. Slightly beat the egg and add to the mixture. Using your hands knead the dough until smooth with no lumps.
  5. Spray 2 pieces of parchment paper with cooking spray. Place the dough in between the 2 pieces of parchment.
  6. Press the dough out into a rectangle. The dough should be about 1/4 inch thick.
  7. Remove the top layer of paper. Spread the sausage mixture on top of the dough.
  8. Roll the dough in a tight pinwheel. When the roll is complete, place in fridge for at least an hour.(Can be placed in freezer if you are short on time.)
  9. Preheat oven to 400 degrees. Remove the roll from the fridge and slice with a sharp knife. You should get 23-24 slices from your roll.
  10. Place the pinwheels on a parchment lined baking sheet. Bake in the preheated oven at 400 degrees. Bake 16-20 minutes. They are finished when golden brown.
  11. Remove from oven and cool on a rack. Note: If you would like to freeze these, let cool completely. Place in a ziplock bag and freeze. Remove from the freezer when you are ready to enjoy. Let defrost for 5-10 minutes then place in oven at 400 degrees and bake for 6-8 minutes.
