Ingredients
- 2 cup Almond Flour
- 1/2 cup Swerve
- 1/4 cup Vanilla Whey Protein
- 3 tbsp Cocoa Powder
- 1 tsp Xanthan Gum
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 6 oz Greek Yogurt (Full Fat)
- 3 large Eggs
- 1/2 tsp Vanilla Extract
- 1/4 cup Almond Milk
- 15 drops Red Gel Food Coloring
- [Frosting] 4 oz Cream Cheese, room temperature
- [Frosting] 2 tbsp Butter Unsalted, Softened
- [Frosting] 1/3 cup Powdered Swerve
- [Frosting] 1/4 cup Heavy Cream
- [Frosting] 1/2 tsp Vanilla Extract
Instructions
- Preheat oven to 325 degrees. Spray a donut pan with cooking spray.
- In a large bowl, whisk together all the dry ingredients. Make sure to break apart any clumps.
- In a separate bowl, beat together the butter and yogurt. Add the eggs and vanilla and beat until combined. Next add half the flour mixture and mix until combined. Add the almond milk continuing to mix until incorporated. Add in the rest of the flour and mix until fully combined. Stir in the food coloring mixing until the color is the same throughout.
- Spoon the batter into the donut wells. Bake for 18-20 minutes. Cool slightly in pan then remove to a cooling rack.
- Frosting: Cream together the butter and cream cheese. Add in the rest of the ingredients and beat until smooth. Spread the finished frosting on the cooled donuts.
