- Preheat the oven to 350 degrees.
- Season the chicken with the salt and pepper.
- Heat the olive oil in an oven safe skillet and add the chicken to the skillet. Cook 4-5 minutes on each side.
- Puree the roasted red peppers, garlic, and olive oil in blender. Add the heavy cream and blend a few more seconds.
- Pour the sauce over the thighs. Turn the thighs in order to coat them thoroughly. Crumble the goat cheese over the top.
- Place in oven for 10-12 minutes. Serve immediately.
