Roasted red peppers give a great flavor to this recipe. It is simple and easy to make. It is different than any of the other recipes because of the peppers. The addition of goat cheese is another unique twist. It is also budget friendly because you use chicken thighs.

Instructions

  1. Preheat the oven to 350 degrees.
  2. Season the chicken with the salt and pepper.
  3. Heat the olive oil in an oven safe skillet and add the chicken to the skillet. Cook 4-5 minutes on each side.
  4. Puree the roasted red peppers, garlic, and olive oil in blender. Add the heavy cream and blend a few more seconds.
  5. Pour the sauce over the thighs. Turn the thighs in order to coat them thoroughly. Crumble the goat cheese over the top.
  6. Place in oven for 10-12 minutes. Serve immediately.
