It may not be pizza but it sure does take care of the pizza craving. I love a portabello burger but this take on pizza has become one of my favorite ways to enjoy the mushroom.

Each mushroom pizza is equal to one serving.

Instructions

  1. Preheat Oven to 450F.
  2. Wash and de-stem the portobello mushrooms.
  3. Place the mushrooms cap side down on a foil-lined sheet and drizzle with olive oil.
  4. Sprinkle with pizza seasoning.
  5. Layer spinach, tomato, cheese and another round of seasoning.
  6. Cook in oven until cheese has melted or around 6 minutes.
  7. Add the pepperoni and cook until the pepperoni is crispy.
