- Melt butter in microwave.
- Add peanut butter to melted butter and stir until smooth. If desired add cocoa powder now.(You can use any other nut butter if you do not care for peanut butter.)
- Add coconut, stevia and vanilla to the peanut butter. Mix well.
- Scoop 2" balls onto a cookie sheet lined with parchment paper.
- Freeze for 5-10 minutes. Place in a zip lock bag and keep in refrigerator.
