Peanut Butter No Bake Cookie

A nice easy cookie. Since you do not bake it, it is a little more fudgy than a regular cookie. If you choose to add the cocoa powder it will not taste like peanut butter as much.

These can be kept in the fridge for up to a week. They are great for a quick snack anytime.

Instructions

  1. Melt butter in microwave.
  2. Add peanut butter to melted butter and stir until smooth. If desired add cocoa powder now.(You can use any other nut butter if you do not care for peanut butter.)
  3. Add coconut, stevia and vanilla to the peanut butter. Mix well.
  4. Scoop 2" balls onto a cookie sheet lined with parchment paper.
  5. Freeze for 5-10 minutes. Place in a zip lock bag and keep in refrigerator.
