A delicious batch of cookies that you're going to have to hide in the cookie jar. These are so good my husband will eat them like his favorite non keto cookies. If you like traditional peanut butter cookies, you will enjoy these just as much.

Instructions

  1. Preheat the oven to 350F.
  2. Grease a large baking sheet. I cook mine on parchment paper.
  3. In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon.
  4. Before rolling the dough into balls the size of walnuts, chill it in the fridge so the dough isn't as sticky.
  5. Place the balls on the prepared baking sheet.
  6. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie - this is optional.
  7. Bake for 12 minutes, remove from the oven and sprinkle the cookies with some of the remaining sugar replacement.
  8. Cool slightly before removing from pan.
