- In a large mug or ramekin melt butter in the microwave.
- Add the flour, salt, and baking powder. Stir with a fork until smooth. Next add in the egg and stir until incorporated.
- Place mug in microwave and cook for 1 minute.(Some microwaves require a little more time. It is okay to test if it is done and place back in for 20-3- more seconds if needed.)
- Remove from mug by running a knife along the edges. Cut in half and serve with butter and sugar free jelly if so desired. I like to toast the muffin and have also used it to make a breakfast sandwich.
