There are a lot of variations on this muffin. This is just one that seems to work well. It is a quick and easy breakfast bread but is great any time of day.

You can experiment with adding ingredients. Sweeteners along with cinnamon are a great addition. You could also make it cheesy by adding a tablespoon of your favorite cheese.

Instructions

  1. In a large mug or ramekin melt butter in the microwave.
  2. Add the flour, salt, and baking powder. Stir with a fork until smooth. Next add in the egg and stir until incorporated.
  3. Place mug in microwave and cook for 1 minute.(Some microwaves require a little more time. It is okay to test if it is done and place back in for 20-3- more seconds if needed.)
  4. Remove from mug by running a knife along the edges. Cut in half and serve with butter and sugar free jelly if so desired. I like to toast the muffin and have also used it to make a breakfast sandwich.
