This cheesecake takes a little more than a minute but it is still a quick dessert to throw together. It is so quick and simple you can make it anytime you have a craving. It is my go to recipe. Add a few berries and it is even better.

Instructions

  1. Combine all the ingredients in a 1.5 cup microwave safe bowl. Whisk together until smooth. Place in microwave and cook for three 30 second intervals. After first 30 seconds taste for sweetness and add more sweetener if needed. Stir between each interval to mix ingredients. Refrigerate for 30 minutes or more. Berries can be added to the top if desired.
