Eggs are a staple on the keto diet. This omelet is a nice breakfast but also would be good for lunch or dinner.

The omelet is low carb and has a healthy amount of fats and protein. It is quick and easy to make.

Instructions

  1. Crack eggs in bowl and add salt and pepper. Whisk until fluffy.
  2. Melt butter in a small frypan and add in the onions and mushrooms. Cook until onions are translucent and mushrooms soft.
  3. Pour the eggs into the pan and cook on medium.
  4. When the eggs begin to get firm, sprinkle cheese on top.
  5. With a spatula gently fold the omelet in half. Cook a little while longer then remove from heat.
