These cheesy mini loaves are so delicious you will want to eat them every day. Add butter to them and you will not miss the bread in your diet. The coconut flour is a little more difficult than almond flour to work with but it is worth the effort.

Instructions

  1. Mix the butter, baking powder, salt and pepper until smooth.
  2. Preheat oven to 350 degrees. Spray a mini loaf pan with cooking spray.
  3. Add the eggs one at time to the batter. Be sure to mix well between each addition.
  4. Stir in the sliced spring onion and the shredded cheese. Reserve some of the cheese to sprinkle on top of the loaves.
  5. Divide the batter evenly between the wells in the mini loaf pan.
  6. Cut the pepperoni slices in quarters. Place the slices on top of the loaves. Sprinkle each loaf with the cheese that was reserved.
  7. Bake in the 350 degree oven for 15 minutes. The loaves should be golden brown.
