- Brown the ground beef in a large skillet. cook until just a little pink is left. Add the onion and pepper continuing to cook until completely browned. Stir in the taco seasoning.
- Stir in the tomatoes and cauliflower rice. Stir in the broth and bring to a simmer. Reduce the heat and cook until the cauliflower rice is soft.
- Sprinkle the cheese over the top and cover. Cook for a few minutes until the cheese is melted. Enjoy plain or with your choice of toppings.(Avocado, sour cream, etc.)
