Mexican Cauliflower Rice

This is an easy dish for people missing Mexican food on a low carb diet. The low carb standard cauliflower rice is the base along with ground beef.

I love that it uses only one pan. The cleanup is so easy. It is ready from start to finish in less than 25 minutes. It is also nice that most of the ingredients you probably already have on hand.

  1. Brown the ground beef in a large skillet. cook until just a little pink is left. Add the onion and pepper continuing to cook until completely browned. Stir in the taco seasoning.
  2. Stir in the tomatoes and cauliflower rice. Stir in the broth and bring to a simmer. Reduce the heat and cook until the cauliflower rice is soft.
  3. Sprinkle the cheese over the top and cover. Cook for a few minutes until the cheese is melted. Enjoy plain or with your choice of toppings.(Avocado, sour cream, etc.)
