This is a great dessert to share. Take it to work or a party and you will be a hit. Nobody will know it is sugar free or low carb.

It is so close to the candies we had as kids it will bring back memories. The caramel and the fudge are a great combination. Since you can cut it into squares, it is easy to pack in a bag for lunch or for a snack. This recipe is definitely a keeper.

Instructions

  1. Preheat oven to 350 degrees.
  2. Grind 1 cup of pecans in a food processor. Chop up another cup of pecans for topping.
  3. Spray a 9x9 pan with cooking spray and add a sheet of parchment paper.(This makes it easier to remove the bars)
  4. Add the Sukrin Gold and the ground pecans to a food processor and mix.
  5. Put all the dry ingredients into a bowl. Add the ground pecans and sweetener to the bowl and whisk all the ingredients together.
  6. Melt the butter and add to the other ingredients. The crust should hold together when squeezed in your hands. Dump the crust into the pan. Press firmly into the bottom of the pan. Use flat bottomed glass to press it evenly.
  7. Whip the cream cheese and vanilla in a bowl. Sift the powdered sugar and add to the cream cheese. Beat until light and fluffy.( Taste and add a little more sweetener if needed.)
  8. In a separate bowl whip the cream. Divide the whipped cream into thirds. Fold the whipped cream a third at time into the cream cheese mixture.
  9. Pour the cheesecake mixture over the crust. Top the cheesecake with the chopped pecans. Cover and refrigerate overnight.
  10. Heat the hot fudge and caramel sauce. Remove the cheesecake from the fridge. Drizzle the sauces over the cheesecake and serve.
