My favorite cookie besides chocolate chip is a snicker doodle. It is basically a sugar cookie rolled in cinnamon. How something so simple can taste so good is beyond me.

This low carb recipe is a great substitute for its high carb cousin. It is also not difficult to make. This is a recipe that would be great for Christmas but could also be an everyday cookie.

Instructions

  1. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
  2. Cream together the butter, salt, and sweetener. Mix till light and fluffy.
  3. Add half the flour and mix on low. Add the other half and continue mix until a dough forms.
  4. Wrap the dough in plastic and refrigerate for about 30 minutes. Scoop dough into 16 balls.
  5. In a bowl mix the sweetener and cinnamon. Roll the cookie balls in the mixture to coat.
  6. Place on cookie sheet and flatten slightly with bottom of a glass.
  7. Bake for 15 minutes. Remove and let cool.
