Low Carb Porridge

A warm breakfast porridge to replace your high in carbs oatmeal. This is for a single serving but can be doubled or tripled easily to make enough for the family.

It does take a little work since you have to stir continuously but the result is well worth it. It is easy to add any topping you might like such as nuts or berries.

Instructions

  1. Add the first four ingredients to a small pot and stir together. Cook over medium heat stirring until it begins to boil. Turn down to low and whisk as the porridge begins to thicken.
  2. Remove the porridge form the heat.
  3. Beat the egg and then add half to the porridge whisking continuously. Add the rest of the beaten egg while whisking. Return to the heat and continue whisking while the porridge continues to thicken.
  4. Remove thickened porridge from heat and stir in heavy cream and butter.
  5. Sweeten to taste with preferred sweetener. Add any additional toppings you may like.(I like the addition of a little cinnamon.)
