Similar to a basic shortbread cookie, this recipe has toasted pecans in it. These cookies melt in your mouth with their buttery goodness.

This will be a classic recipe for you to make at Christmas. You will probably want to make them throughout the year, though.

Instructions

  1. Preheat oven to 325 degrees. Line rimmed cookie sheet with parchment paper.
  2. Beat the butter, sweetener and vanilla in large bowl until smooth. Add in the flours and salt and mix until well combined.
  3. Chop the toasted pecans and stir into the batter.
  4. Scoop 1" balls and place on cookie sheet. Flatten slightly.
  5. Bake 5 minutes then remove from oven and flatten again to 1/4 inch thick.
  6. Bake for another 10-12 minutes until edges begin to brown. Remove from oven and allow to cool completely. Store in an airtight container.
