Low Carb Onion Soup

This is not you traditional French onion soup but it is still delicious. It has only six ingredients so it is super simple to make. It may seem strange to add Stevia to soup but it really brings out the flavors.

Personally I love cheese, so I would probably add a slice of Swiss to the top of my bowl of soup. Of course, adding cheese changes the macros. Make sure to adjust your numbers if you decide to add some cheese.

Instructions

  1. Heat butter and olive oil in a medium stock pot over medium low heat. Add the onions and salt.
  2. Cook uncovered stirring constantly until onions are golden brown. Add the stevia and cook for 5 more minutes.
  3. Add the beef stock and simmer on low for 25 minutes.
  4. Ladle into bowl and add cheese if desired.
