This is a quick easy meal. If you use rotisserie chicken, there is very little prep involved. You can also use riced cauliflower. Just be sure to press out as much liquid as possible.

The baby corn has very little carbs so you can have the corn taste without overdoing the carbs. This helps to give it an authentic Mexican taste.

Instructions

  1. Make sure cauliflower is chopped fine. Squeeze all the liquid out of it. Set aside.
  2. Cut baby corn into small slices. Set aside.
  3. Heat the oil in a skillet. When oil is hot, add the cauliflower. Saute for 2-3 minutes.
  4. Add in the rest of the ingredients except for the cheese and cilantro. Cook stir constantly. Continue to cook until all the liquid is absorbed.
  5. Add in half the cilantro and stir until mixed in well.
  6. Stir in half the cheese, cooking on low for about a minute. Turn the burner off and top with the rest of the cheese. Cover and let sit until cheese is melted.
  7. Finish off with the rest of the cilantro. Enjoy.
