Low Carb Carrot Cake

This is a classic cake to make for even your non keto friends and family. It does not have the nuts that are traditionally in carrot cake but the coconut adds a nice texture.

This recipe is great for a special occasion or just to have a nice dessert without sugar. The cream cheese frosting can be used for other cakes, cookies or brownies.

Instructions

  1. Preheat oven to 350 degrees. Line two 8 inch cake pans with parchment paper and spray with cooking spray.
  2. In a medium bowl, beat the eggs and sweetener together until fluffy and sweetener has dissolved. Add the vanilla continuing to mix.
  3. Sift together the dry ingredients in a separate bowl. Add the dry ingredients slowly into the egg mixture.
  4. Stir the coconut into the batter. Stir the carrots into the batter until combined.
  5. Melt the butter. Add the melted butter to the batter, stirring until combined.
  6. Pour the batter evenly into the two pans. Bake for 30-35 minutes until a toothpick inserted into the center comes out clean.
  7. Let cake cool inside pan for 15 minutes and then invert onto cooling racks. While cake is cooling prepare the frosting.
  8. (Frosting) Cream the butter and cream cheese together until smooth. Add the sweetener and mix in until smooth. Add in the vanilla continuing to mix. Add in the heavy cream a little at a time until frosting is nice and fluffy.
  9. Spread the frosting on the bottom cooled layer and then on the top layer. Spread the rest of the frosting on the sides. Sprinkle with coconut if desired.
  10. Refrigerate finished cake for at least 30 minutes.
