Low Carb Brownie Cheesecake

Ingredients

Instructions

  1. Preheat oven to 325 degrees. Line a 9 inch springform pan with parchment paper and spray with cooking spray.
  2. Chop up the chocolate. Melt the butter and chocolate together in a microwave. Stir every thirty seconds until it is smooth.
  3. Whisk together the almond flour, cocoa powder, and salt together.
  4. Beat the eggs, vanilla, and swerve together. Add in the almond flour mixture slowly. Next add in the chocolate and butter and mix until smooth.
  5. Spread evenly over the bottom of the pan. Bake for 12-18 minutes. Edges should be set and the center still soft. Set aside and let cool while preparing the cheesecake layer.
  6. Reduce the oven to 300 degrees.
  7. Beat the cream cheese until smooth. Add the rest of the ingredients continuing to beat until smooth and creamy.
  8. Pour the cheesecake over the cooled brownie crust. Place on a baking sheet. Bake for 35 to 45 minutes. The edges should be firm and the center slightly jiggly.
  9. Remove from oven and let cool at least an hour. Run a knife around the edges then remove the sides. Cover with wrap and refrigerate for at least 3 hours.
