Brownies on a low carb diet are possible. The ability to control how many you eat is not always so easy. This recipe is for mini bite size muffins. It definitely makes it easier to control your macros. One bite sized muffin is one carb.

I love the muffins fudgy but you can cook them a little longer and get a more cake like texture. Whichever way you bake them, they are delicious.

Instructions

  1. Preheat oven to 350 degrees. Prepare a mini muffin pan by lining with paper liners.(This recipe will make approx. 16 mini brownie muffins.)
  2. Melt the butter. Whisk together the dry ingredients.
  3. Whisk the eggs and vanilla together. Add the melted butter to the eggs and vanilla. Stir the dry ingredients into the wet ingredients just until combined.
  4. Spoon the batter into 16 muffin cups. Place in preheated oven.
  5. Bake for 14-18 minutes. If you prefer a fudge like brownie, 14 minutes is optimal. To obtain a cake like brownie cook for approx. 18 minutes.
