Blueberry muffins are a classic. This low carb recipe is a great addition to anyone's breakfast menu. These muffins can be eaten alone or with a big breakfast of bacon and eggs.

Muffins are not only great for breakfast they are also good for a quick snack. These can be frozen and then put in microwave for about 20 seconds.

Instructions

  1. Preheat oven to 350 degrees. Line muffin pan with paper liners.
  2. Whisk together all the dry ingredients until well mixed.
  3. Melt the butter. Add the melted butter to the dry mix.
  4. Add the almond milk, eggs, and vanilla to the the mix. Fold in the blueberries.
  5. Pour the batter into the lined muffin cups
  6. Bake for 20 minute or until a toothpick inserted in the middle comes out clean.
  7. Let cool and enjoy with spread of butter.
