Instructions

  1. Preheat oven to 425F
  2. Chop cauliflower into small florets.
  3. Place cauliflower, olive oil, and salt and pepper into a sealable bag. Shake until coated with oil.
  4. Place on a baking sheet and roast for 25-30 minutes or until browned on the edges.
  5. While cauliflower roasts, cook bacon in a pan until crispy.
  6. In a large bowl, place all ingredients (including bacon fat) and mix together until combined.
