When you're on keto and really missing potatoes cauliflower is an excellent solution. This cauliflower fauxtato salad is going to trick you into thinking you're actually eating potatoes.

Instructions

  1. Preheat oven to 425F
  2. Chop cauliflower into small florets.
  3. Place cauliflower, olive oil, and salt and pepper into a sealable bag. Shake until coated with oil.
  4. Place on a baking sheet and roast for 25-30 minutes or until browned on the edges.
  5. While cauliflower roasts, cook bacon in a pan until crispy.
  6. In a large bowl, place all ingredients (including bacon fat) and mix together until combined.
