These muffins can be frozen and heated up in the microwave. They are also the perfect snack to take to work for your coworkers. They will not even believe they are low carb.

Instructions

  1. Pre-heat oven to 350F. Line a muffin pan with paper liners. In a bowl, combine almond flour, flaxseed meal, erythritol, and poppy seeds together.
  2. Stir in the melted butter, eggs, and heavy cream until smooth. Then add the baking powder, vanilla, stevia, lemon zest, and lemon juice. Mix again until well combined.
  3. Measure the batter out equally between 12 muffin cups. Bake for 18-20 minutes or until slight browning appears.
  4. Remove from the oven and let cool for about 10 minutes on the counter.
