A nice cookie with a buttery flavor. It is simple to make and a cookie you will want to have around for a snack.

This is a simple base cookie that you can add ingredients to if you like. Nuts would be a great addition, as well as sugar free chocolate chips.

Instructions

  1. Preheat oven to 300 degrees. Line a cookie sheet with parchment paper.
  2. Whisk together the almond flour, salt, and erythritol in a large bowl.
  3. Add the butter and vanilla to the dry mix and combine.
  4. Add the egg and mix well.
  5. Scoop tablespoon size balls and place on cookie sheet pressing down slightly. Should be approximately 16 cookies.
  6. Bake 15-25 minutes until edges begin to brown. Remove from oven and allow to cool. Cookies will firm as the cool.
  7. Cookies should be kept in an airtight container once they are cool.
