Sausage Breakfast Casserole(Keto Friendly)

Casseroles are great if you want a convenient way to have a ready made breakfast for the week. They are also great for a brunch or family breakfast.

This recipe has cayenne pepper to give it a little spice. Of course you can omit the pepper if you are so inclined. The vegetables help to make the casserole a complete meal. It definitely is not for breakfast only.

Instructions

  1. Preheat oven to 375 degrees. Spray a casserole dish with cooking spray.
  2. Brown the sausage in a skillet until almost completely cooked.
  3. Add the cabbage, onion and zucchini to the skillet. Cook until the vegetables are soft and the sausage is completely cooked.
  4. Spoon the sausage and vegetables into the prepared casserole dish.
  5. In a large bowl, whisk together the eggs, mayonnaise, mustard, sage and pepper until combined.
  6. Add 1 cup of the cheese to the egg mixture and stir.
  7. Pour the egg mixture over the sausage and vegetables.
  8. Sprinkle the remaining cheese over the top of the casserole.
  9. Bake in oven30 minutes. Casserole is done when the cheese is lightly browned.
