- Place cream cheese, eggs, vanilla and cinnamon in a blender and blend until combined.
- Add the coconut flour and baking powder to the blender and blend about 45 seconds.Add cream if batter is too thick.(Batter will thicken the longer it sits)
- Pour batter onto an oiled preheated skillet. Pancakes should be about 4-5 inches in diameter. Cook until bubbles begin to form. Flip the pancakes and cook another 1 1/2-2 minutes until pancakes are done.
- Serve with butter and your choice of toppings.
