These pancakes are as good as regular pancakes. They are easy to make since you just throw everything in a blender. They freeze well so you will want to have them on hand all the time.

Instructions

  1. Place cream cheese, eggs, vanilla and cinnamon in a blender and blend until combined.
  2. Add the coconut flour and baking powder to the blender and blend about 45 seconds.Add cream if batter is too thick.(Batter will thicken the longer it sits)
  3. Pour batter onto an oiled preheated skillet. Pancakes should be about 4-5 inches in diameter. Cook until bubbles begin to form. Flip the pancakes and cook another 1 1/2-2 minutes until pancakes are done.
  4. Serve with butter and your choice of toppings.
