Instructions

  1. Preheat oven to 350 degrees. Spray a 9x5 loaf pan with cooking spray.
  2. Separate egg whites and yolks. Whip the egg whites until peaks form.
  3. Add the yolks, sweetener, and butter to the egg whites.
  4. Mix in the flour, then add the rest of the ingredients continuing to mix. When the batter is completely mixed pour into the pan.
  5. Bake for 45 minutes. Cake is done when toothpick inserted into center comes out clean.
  6. Place all the ingredients for the frosting in a bowl and mix until smooth.
  7. After cake has cooled completely, use a spatula to spread the frosting on top.
  8. Store in an airtight container in the fridge.
