Instructions

  1. Preheat oven to 400 degrees.
  2. Crush pork rinds.
  3. Mix the crushed pork rinds and the spices together. Spread out onto a plate.
  4. In a medium bowl, whisk together the egg, mayonnaise, and dijon mustard. Dip the chicken into the egg mixture. Coat each piece with the pork rind mixture.
  5. Place the chicken on a wire rack over a baking sheet. Bake in the oven for 40 minutes.
