Keto Chocolate Zucchini Muffins

Need I say more? Chocolate muffins are the best. Don't let the zucchini deter you from these muffins. Zucchini has a neutral flavor in recipes. It adds some fiber and helps keep the muffins moist.

The use of coconut flour makes this great for people with nut allergies. It is perfect for kids snacks at school since it has no nuts and is chocolate!

Instructions

  1. Preheat oven to 350 degrees. Line muffin cups with paper liners.
  2. Grate zucchini and place in a colander and sprinkle with salt. Set aside.
  3. Chop the chocolate into fine pieces. Melt with butter in 30 second intervals.
  4. In a bowl, whisk together the dry ingredients. Add the eggs and mix in.
  5. Add the vanilla, along with the melted chocolate and butter. Mix well. Next squeeze all the water out of the zucchini. Add it to the batter and mix with a hand mixer making sure it is well incorporated.
  6. Scoop into 10 muffin cups. Even out batter by lifting the pan a few inches and dropping it. Sprinkle the tops of the muffins with the chocolate chips.
  7. Bake 15-18 minutes making sure not to over bake. Let cool slightly before serving.
