Instructions

  1. Preheat oven to 350 degrees. Line two 8 inch cake pans with parchment paper and spray the pans with cooking spray.
  2. Whisk together the almond flour, flaxseed meal, baking powder and salt in a medium bowl. Set aside.
  3. Put the butter, sweetener, and cocoa powder in a microwave safe bowl. Melt together in microwave at 15 second intervals. Stir in between intervals. Sweetener should be melted and well incorporated. Let the butter mixture cool slightly before next step.
  4. Add the eggs one at a time, continuing to mix with each addition. After the eggs are well mixed, slowly add in the flour mixture. Continue to mix until the batter is smooth.
  5. Pour evenly into the two pans. Bake for 15-19 minutes until a toothpick inserted into the center comes out clean.
  6. Let cool for 30 minutes in pans. Remove from pans and let cool on racks. Wrap the cooled cakes and place in refrigerator for a few hours before frosting.
  7. (Frosting) Cream together the butter, cream cheese and sweetener and continue to mix until light and fluffy.( I add less sweetener and then taste adding more as needed.)
  8. Add the cocoa powder, salt and vanilla. Taste and add more cocoa powder or sweetener if needed.
  9. Put together the layers by frosting the cooled layers. Frost the tops and then the sides. Store in an airtight container in the fridge.
