Need I say more. Chocolate chip muffins are probably the best breakfast food ever. They are also a great snack for an afternoon pickup.

I like to have a glass of almond milk with my muffin. The only problem is having only one.

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, whisk together the flour, baking powder, and erythritol. Add in the 2 eggs and mix well.
  3. Melt the butter and add to the mixture. Mix well then add the almond milk and vanilla continuing to mix.
  4. Stir in the chocolate chips just until incorporated.
  5. Pour into 6 lined muffin cups. Bake for 20 minutes. Let cool then enjoy.
