- Preheat oven to 350 degrees.
- In a large bowl, whisk together the flour, baking powder, and erythritol. Add in the 2 eggs and mix well.
- Melt the butter and add to the mixture. Mix well then add the almond milk and vanilla continuing to mix.
- Stir in the chocolate chips just until incorporated.
- Pour into 6 lined muffin cups. Bake for 20 minutes. Let cool then enjoy.
