This recipe calls for an instant pot. This is one of the best investments I ever made. It is so versatile and you can find hundreds of recipes for its use. It is definitely something worth treating yourself to.

Butter chicken is a great comfort food. It has rich creamy taste. This low carb version is better than most recipes which have tons of carbs.

Instructions

  1. Place the first nine ingredients in the instant pot and stir well. Make sure all ingredients are incorporated. Add the chicken on top.
  2. Close the pot and cook on high for 10 minutes. Let pressure release naturally for 10 minutes, then release the rest manually.
  3. After all pressure has been released, remove chicken.
  4. Blend together the sauce left in the pot. A handheld blender is ideal but you can pour the sauce in a blender and blend.
  5. Let the sauce cool for 6-7 minutes. Cut the butter in cubes. Add the butter, heavy cream, cilantro, and garam masala to the sauce. Stir until well mixed.
  6. Remove half the sauce. Freeze or refrigerate for a couple days.
  7. Add the chicken back in making sure it is covered in the sauce. Let warm and enjoy.(Great over cauliflower rice or zoodles.)
