Keto Blueberry Cheesecake Squares

This is a wonderful spring recipe. It is easy to make and very portable since it is cut into squares. The sweetness is based on your own taste. Be sure to start with less sweetener and add more if needed. The blueberries are just dropped in, so as not to turn the cheesecake purple.

Instructions

  1. Preheat oven to 320 degrees. Line an 8 inch square pan with parchment paper and spray with cooking spray.
  2. Melt the butter. Place all ingredients in a blender(except the blueberries) and blend until smooth. A stick blender also works well just make sure the ingredients are well blended. Make sure to taste for sweetness. Add more sweetener if desired.
  3. Pour into the lined pan. Drop the blueberries on top of the cheesecake.
  4. Bake in the 320 degree oven for 20-30 minutes. The center should be done.
  5. Let cool completely the cut into 9 squares.
