A sugar free cake for your birthday. This may not sound possible but it is. This recipe is not only nice looking but it also tastes great.

You could make any frosting you like for the cake. We have used a cream cheese frosting for our topping. A chocolate frosting would also be great.

Instructions

  1. Preheat oven to 350 degrees. Line the bottom of 9 inch springform pan with parchment paper.
  2. Cream the butter and sweetener together until light and fluffy.
  3. Mix in the eggs one at a time. Make sure the eggs are well incorporated. Add the almond milk and vanilla and mix.
  4. Sift together the almond flour, coconut flour and baking powder. Add to the batter a cup at a time.
  5. Pour 1/3 of the batter into the pan and bake 18-22 minutes. The top should be golden and set. This process will be repeated two more times for a total of three layers. Allow the layers to cool on a rack.
  6. While the layers, are cooling prepare the frosting. Whip all the ingredients for the frosting together. Make sure the frosting is smooth.
  7. Make sure the cake layers are completely cool. Spread the frosting in between the layers then on top. Finally spread the frosting on the sides. Enjoy. ( You could sprinkle nuts or sugar free chocolate chips on the frosting if you want to make it a little more festive.)
