If you like something sweet for breakfast, this is for you. You can use a mixture of berries or just one. I prefer blueberries but strawberries or blackberries work as well.

This recipe could be a dessert as well as a breakfast. It is easy to put together as a last minute breakfast when you have just a little time.

Instructions

  1. Melt the ghee and let cool slightly. Do not use hot.
  2. Put the cream cheese, eggs, ghee, and syrup in a bowl and blend with a hand blender until smooth.
  3. Pour the mix into a mug or small bowl and stir in the almond flour. Next stir in the berries.
  4. Microwave for 4 minutes.
  5. In another bowl, blend the cream and brown sugar syrup until mixture stiffens.
  6. Let the finished cake cool for a minute or so then top with the whipped cream.
