Italian Sausage & Pepper Jack Meatballs

These meatballs are so good you will not know there is no breading in them. The pork rinds are a good substitute for bread crumbs and bind the meatballs together. The pepper jack gives a nice kick to the meatballs. They are great served with an Alfredo sauce but a marinara sauce would also be great.

Instructions

  1. Preheat oven to 350 F.
  2. Break up sausage into small pieces so that it will mix well with the ground beef.
  3. Add your ground beef, ground pork rinds, spices, and eggs to the sausage.
  4. Mix everything together well until you can form meatballs.
  5. Grab 2/3 the amount of meat you want for each meatball and form it into a semi circle.
  6. Put your pepper jack in the middle and top it with some the rest of the ground beef to seal it up.
  7. Bake in the oven for 35-45 minutes depending on their size. The smaller they are, the less time they need to cook.
  8. Spoon alfredo sauce over the meatballs and serve.
