- Turn instant pot on saute. Cut up the bacon and place in the pot. Cook until nice and crispy. Take out and place on a plate.
- Cancel the saute. Place the chicken in the pot. Add the rest of the ingredients except for the cheese and the scallion. Turn the pot on Manual and HIGH pressure. Cook for 15 minutes then do a quick release.
- Remove the chicken and place on a plate. Shred the chicken. Return the shredded chicken to the pot.
- Stir in the cheese. Stir until melted. Top with the bacon and scallion.
