- Spray 2 one cup ramekins with cooking spray.
- Melt butter in microwave. Stir in dry ingredients.
- Whisk the egg and coconut milk into the batter.
- Divide batter between the ramekins. Microwave for 2 minutes.
- Let cool. Run a knife along the sides and remove from ramekin. Slice in half and toast. Add butter and sugar free jelly if you like.
