This is just one version of an English muffin. There are a lot of variations to this recipe. This one uses sunflower seed flour in order to keep it nut-free. It may not look exactly like an English muffin but once toasted it is close.

Instructions

  1. Spray 2 one cup ramekins with cooking spray.
  2. Melt butter in microwave. Stir in dry ingredients.
  3. Whisk the egg and coconut milk into the batter.
  4. Divide batter between the ramekins. Microwave for 2 minutes.
  5. Let cool. Run a knife along the sides and remove from ramekin. Slice in half and toast. Add butter and sugar free jelly if you like.
