This is a great one pan meal. I am not a huge fan of almonds in my food, so I skip the almonds. They do add a unique flavor to the dish. I love the ease of the dish and the fact it can be served in a bowl.

Instructions

  1. Heat the coconut oil in a heavy skillet. When the oil is hot, add in the mushrooms. Cook for 2-3 minutes.
  2. Add in the almonds and cook for about a minute. Add the ground beef, salt, pepper, and red pepper flakes. Cook until the beef is cooked through. About 5-6 minutes.
  3. Stir in the almond butter, capers and olives and combine well. Stir in the spinach and cook a few minutes until mixed in well.
  4. Spoon into 4 bowls and enjoy.
