Breakfast is definitely my favorite meal. I do miss having a big breakfast with all the breads that go along with it. French toast was always the easiest thing to whip up. I also enjoyed a great muffin for a quick breakfast on the go. Combining french toast and muffins into one dish seems like a win win. How could breakfast get any better? It probably can't. Personally I am not much of a nut person. I am not allergic or anything, I just prefer my baked goods without nuts. It is a texture thing with me. Therefore, I leave the almonds out of the recipe. Of course this changes the nutritional value a bit.

Instructions

  1. Preheat oven to 350F.
  2. Grind 1/4 cup Almonds in the food processor and stick them in a pan on medium-high heat to toast. Make sure you keep an eye on them and stir as needed.
  3. Mix together your almond flour, erythritol, cinnamon, salt, and nutmeg.
  4. In a microwave safe bowl, add your coconut oil, butter, and peanut butter, then microwave for 30-40 seconds to melt it.
  5. Add your peanut butter, coconut oil, butter, eggs, vanilla, stevia, and heavy cream to the almond flour and mix well.
  6. Fill cupcake tray with the batter, then top with toasted almonds.
  7. Bake for 20-25 minutes, let cool for 5 minutes, then remove from cupcake tray and let cool for an additional 10-15 minutes.
