This is an Indian recipe that is easy to make. It looks and tastes complicated but can be thrown together without much effort. Usually served with rice, cauliflower rice is great substitute. Also you could try a low carb naan bread to go along with it.

Instructions

  1. Mix yogurt, turmeric, cumin, masala, lemon juice, and salt in a medium bowl. Cut the chicken into bite sized pieces and stir into yogurt mixture. Cover and refrigerate for at least 2 hours.
  2. Melt butter and oil in a pan over medium heat. Add the onion and cook until translucent. Stir in garlic, ginger and cinnamon and continue to cook. Cook until the onions become brown, stirring continuously.
  3. Add the tomatoes and jalapeƱo pepper. Cook for 10 minutes until the pepper is soft. Add salt to taste.
  4. Add the chicken and yogurt mixture to the pan. Stir well and cooker 5 minutes. Stir in the chicken stock and bring to a boil. Lower the heat and simmer for at least 15 minutes.(This can be longer if you have the time.)
  5. Stir the coconut milk and almond flour together. Add the flour and milk mixture to the pan, stirring well. Simmer for another 15 minutes. Add salt to taste.
  6. Serve over cauliflower rice and enjoy.
