Dairy Free Chocolate Low Carb Cheesecake

This is the perfect recipe for people who can't or choose not to have dairy. It is called cheesecake but no real cheese is involved.

Cashews are the base of the filling. Once they are softened overnight and then blended smooth they have a cream cheese like texture. Of course the addition of chocolate makes this a great recipe to have around for your friends who are vegan. Though, you don't have to be vegan to love this recipe.

Instructions

  1. To prepare the cashews, place in a bowl and cover with 2 cups cold water. Soak overnight or at least 12-14 hours.
  2. Preheat oven to 350 degrees for the crust. Spray a 7 inch springform pan with cooking spray and line the bottom with parchment paper.
  3. Make sure the walnuts are finely chopped. Place in a bowl, along with the almond flour, sweetener, and cocoa powder and mix together. Next add in the vanilla and coconut oil and mix well.
  4. Press the crust into the bottom of the prepared pan. Place in the oven and bake for 10 minutes. Remove from oven and set aside to cool.
  5. Drain the cashews that have been soaking. Place in a food processor along with the water, almond milk, vanilla, and lemon juice. Process until smooth.
  6. Add the salt, cocoa powder, and sweetener and continue to process. Melt the chocolate in the microwave and add the melted chocolate to the processor. Blend until well mixed. Pour the mixture onto the cooled crust.
  7. Refrigerate until completely set. Remove from refrigerator about 30 minutes before serving. Enjoy with a topping of sugar free whipped cream.
