This recipe is your classic chicken soup. Whenever you are feeling a bit under the weather, this will be your go to recipe. It is so good.

You could make a couple batches of this to freeze and have on hand all the time. I promise you will always be glad you have some on hand for a quick meal.

Instructions

  1. Sprinkle chicken with salt and pepper and place in the bottom of crockpot.
  2. Put the minced garlic on top of the chicken and pour in the chicken stock.
  3. Cook on high for 2 hours. While cooking slice and dice the carrots and onions.
  4. After 2 hours add the carrots and onions to the crockpot and continue to cook for 2 more hours.
  5. Add the chopped kale the last 30 minutes of cooking.
  6. The soup is done after a total of 4 hours cooking. Remove the chicken thighs and cut into bite sized pieces then return to the soup.
